It seems Facebook is screaming for ice cream (and pie) as Healdsburg’s Noble Folk Ice Cream and Pie Bar prepares to open this week. With nearly 600 LIKES in a single weekend, BiteClub’s got a sneaking suspicion that owners Ozzie Jimenez and Christian Sullberg are about to have another hit on their flour and sugar-covered hands.
The twenty-somethings have become Healdsburg’s favorite cupcake pushers since opening Moustache Baked Goods in late 2011. Cause if you’ve had one—or twelve at a sitting (no judgement)—you’ll pretty much do anything for your next frosting fix. They’re that good.
Noble Folk is a natural progression for the two, expanding their bakery repertoire and their real estate with inspired house made ice creams and heritage(ish) pies.
On the ice cream menu: Black sesame and coconut, cardamom, blackberry rosemary, Japanese purple yam and juniper honey.
Opening pies include strawberry ginger, blueberry plum thyme, walnut maple and apple caramel pies. Noble Folk puts a twist on the traditional by using some unusual ingredients like farro, bolero and buckwheat flour (from nearby Front Porch Farm) and a “single origin pie” that is crafted entirely from Front Porch’s leaf lard, fruit and locally milled flours.
And what goes better with pie than coffee? Especially Stumptown Roaster’s cold brew (all the rage with the cool kids). If you’re like me, you’re often jonesing for a cuppa after 6pm, and la-de-da, they’ll be open ’til 9pm.
Expect to pay about $5.50 for a slice and $3.50 for a scoop. This isn’t Baskin Robbin’s, after all.
116 Matheson St., Healdsburg, (707) 529-2162. Open daily from 12pm to 9pm.
Found the whole experience delightful, from the cardamom-almond ice cream to the thoughtful decor. Simply superb.
I’m sorry, not a fan. went last night and was disappointed. It is very sterile inside, all white. No place to sit except for six stools along the storefront. Your pie is served to you pre sliced in a paper togo clam shell along with a plastic fork. How long has that been sitting there? When asked if they could warm the pie, the answer was no, we have no way to heat it. So where do they bake? No oven? The longer we sat there, the more we realized that the shopped smelled like nothing, no wafting aroma of fresh baked pies or fruit or even coffee, just nothing. And the music became this thumping unpleasant background noise. The pie was so so, crust was thin and lacking. Filling needed sugar. Lets face it, pie is all about the crust. The price was respectable considering the size of the slice. But definitely, not your grandma’s pie. Maybe they should visit her to remember what the whole experience of homemade pie is supposed to be.
well Kili, I’m a Healdsburg local and I love the pies there, they warm the slices to order, and they make everything at the other location A BLOCK AWAY! Every pie slice i’ve ordered has been superb! they just got ranked as one of the best pies in the bay area.

and as far as the interior, it’s gorgeous! local art on the walls, cute and unique gifts. It reminds me of the city. my guess Kili is you are more used to those corn syrup pies they sell at the supermarket, so go grab one! head on home, put your sweatpants on stick it in the microwave and watch your re-run marathon of gilmore girls. #byefelicia
Anyone care to comment on the name? It sounds either like a joke, or some precious notion of which I am unaware–the Amish? Rich people who like good coffee?
We managed to stumble into this place on their soft opening day. On the menu and not in the article was a super credible passionfruit ice cream. Topped off with a free edible flower. How welcoming! I will tell you that the black sesame coconut was intense beyond belief.
I would call Noble Folk a hit. Maybe even more than their original shop.
Best if luck guts, sounds great!
These flavor combinations sound amazing, can’t wait to try them!
Or tourists. Just my guess.
My last comment intended for Judith
Going to go out on a limb and say they only want people who are looking for a special ice cream, and are willing to pay for the time, energy and crafting of such a treat. Thus, your not there target market.
wonderful news….can’t wait to take my guy on a date night…..cheers!
I can hardly wait to try several of their wares. Mmm, & the best of luck to Ozzie & Christian,
When I get a hankering for a piece of pie, I get mine for only $3 a slice at Mom’s on Hwy 116 and Guerneville Road.
While I wish these guys luck, $5.50 is too pricey. I’m a local, but won’t be shopping there.
Comments like this make me sad. It’s the kind of ignorance I work so hard to dispel with biteclub.
