Are you molecular enough for this? Madrona Manor’s Executive Chef, Jesse Mallgren will host a five course dinner on March 16, 2011 with Aki Kamozawa and H. Alexander Talbot of Ideas in Food. The couple are heavy hitters in the molecular gastronomy world, consulting and teaching chefs how to work with things like Activa, liquid nitrogen and CO2, sous vide and powdered fats. Reservations required, $90 per person, $47 for wine pairings, 433-4231. Kamozawa and Talbot will also teach several classes on March 14 and 15 including a three hour session on transglutaminase, a protein to “restructure” meat an poultry; liquid nitrogen and the properties of cooking with eggs.
