Are you molecular enough for this? Madrona Manor’s Executive Chef, Jesse Mallgren will host a five course dinner on March 16, 2011 with Aki Kamozawa and H. Alexander Talbot of Ideas in Food. The couple are heavy hitters in the molecular gastronomy world, consulting and teaching chefs how to work with things like Activa, liquid nitrogen and CO2, sous vide and powdered fats.
