Frosted Cashew Cookie Recipe

Cashews, brown butter and sugar. I think I've died and gone to heaven with this frosted cashew cookie recipe.

Frosted Cashew Cookie Recipe

1/2 cup butter
1 cup brown sugar, firmly packed
1 egg
1/2 tsp. vanilla
2 cups sifted flour
3/4 tsp baking powder
3/4 tsp baking soda
1/4 tsp salt
1/3 cup sour cream
1 3/4 cup salted whole cashew nuts

Cream butte and sugar until light and fluffy. Beat in egg and vanilla. Add sifted dry ingredients alternately with sour cream, mixing well. Carefully fold in cashew nuts. Drop by teaspoonfuls onto a greased cookie sheet. Bake at 400 degrees for 10 minutes. Cool.

Golden Butter Icing
1/2 cup butter
3 T coffee creamer
1/4 tsp vanilla
2 cups sifted confectioners sugar
Cashew nuts

Lightly brown butter, remove from heat, add cream and vanilla. Add sugar. Beat until smooth and thick enough to spread. Frost and top with a whole nut.
